Yummy Gluten Free Veggie Lasagna

2 cups chopped Zucchini
2 cups chopped Onion
2 cups peeled and chopped Eggplant
2 chopped Sweet Peppers
2 tsp Garlic
1 tsp Salt
1 1/2 cup chopped Mushrooms

8 oz good Tomato Sauce
Ricotta Cheese
Parmesan cheese
Mozzarella cheese
Tinkyayda Lasagna Noodles

Cook 1 PackageTinkyaya Lasagna Noodles 15- 17 min
Preheat oven 350

Place first 6 ingredients in oiled and warmed pan, cook 5 minutes
Add mushrooms, saute another 4 minutes
Set aside

Mix 1 small package of Ricotta cheese with 1/3 cup milk  - set aside

Place 1/3 Tomato Sauce on bottom of oven ready pan, add pasta (run under cold water), 1/2 ricotta and 1/2 veggie mixture, repeat 3 times.

Bake for 30 minutes.
Delicious

Overall, I would say it was pretty good for Gluten Free Pizza, but the French Meadow Bakery Crust I found I like quite a bit better.  Of course, now my local store does not carry it, sigh. . .

Stop Obsessing

For some reason, once you find out that to stay healthy you need to eat a gluten-free diet, you start to obsess about all things gluten-free.

Some days I forget the old standards- summer salads, fruits, veggies, and other of nature's finest in my daily quest for the best tasting gluten-free products.

For the last few weeks, to get my protein, (my stomach still mostly wanting to abstain from a lot of meat),  I have begun to make fresh fruit and protein smoothies.   They are delicious.

Whether I used fresh or frozen fruit, yogurt or soy milk with some ice, they are refreshing and give me a boost in the morning as I rush off to work mug in hand.

I have to say upfront, that I am not a big fan of TV or frozen entrees, but during a busy day at work, I have been known to eat a few.

My new gluten-free favorite line is Amy's.  The mexican entrees are better than the Indian (bummer, because I love Indian Food), but the tamales, etc were pretty good if you have access to an oven, obviously they are better than in the micro.

Finding My Green Thumb



My garden is shaping up at least for now.
I have Chives, Thyme, Dill, Tomatoes, Squash, Mint, Lettuce and will soon give Strawberries a go.
It is still cold in the Rockies at night so just to be safe I am still bringing in most of the plants at night.
Thankfully I have found a good solution to do so and my son does not seem to mind.

8 accupuncture sessions

It has been over a month since my last accupuncture session, and I have to say that I definitely benefitted and do see a difference without it.

I know that it can be somewhat pricey - between $60-75 a session-be sure to ask if they have a better deal if you pre-pay several appointments ahead of time and usually they will.

With a few more dollars in my pocket after this summer selling session, I plan to begin going back once a month.

So far so good


I am happy to say that my herbs, lettuce and squash are still alive.  
Since we had snow last week, I am going to wait a few weeks before planting them and the tomatoes and strawberries outside.
I will say that my mint is very temperamental.  
The host in me is dreaming of serving mint julips by the lake, but if her attitude does not improve, she is out.

Emotional Terrorism

I have a few folks that I know who I lovingly refer to as emotional terrorists.  I often joke about it, but in a way I also realize that there is some truth and honesty in the moniker.  What do you do with those people in your life who act out their insecurities and project their fears on to you constantly? 

It is my belief that there are emotional components to CFS as well as physical and physiological.

I bet if you look back at your life and yourself you will find a few incidents that stand out and have been draining your energy- whether it is family drama, beliefs about yourself, or something that happened that took some of your energy away.

Take inventory, and work to let go of anything or anyone that takes more energy than it / they give.

I still I have not recovered from my evening with Food Inc. Sure, I knew our first date would be thought provoking, and we would feel an instant kismet, but I had no idea that my stomach would begin to recoil in fear each grocery visit thereafter.

Looking at the positive side as I often do, it did energize me to finally start my own garden, find local farmer’s markets, research charts for eating in season and find a renewed affinity for tofu and protein shakes.

Something good comes out of everything, I guess.

Adventures in Gardening

I have not been able to eat meat since seeing Food Inc last week.

Today as my own birthday present, I asked my son and husband to help me build a garden, and despite almost killing each other putting it together, it ended up looking great.

Not sure of all of the secrets to high altitude gardening just yet, but if I can grow a few tomatoes, strawberries, lettuce and herbs in my first green thumb attempt I will be happy.  I remember hearing once, if you built, they will come.  I hope that means grow too.









2) Use rope to create sections within the frame



3) Level out the ground where you plan to place the frame



4)  Even if you have very little space, you can have your own garden




5) Flip the frame over and use a staple gun to add the mesh underneath to hold the soil




6)  Fill the frame with rich soil, at least one Miracle-Gro type soil, add fence if it needs protection from small animals.




Since our ground still freezes at night, we are starting the seeds inside.  Hopefully we will not be confused for a marijuana dispensary.

Can't wait until we can plant these in a few weeks.
