Yummy Gluten Free Veggie Lasagna

2 cups chopped Zucchini
2 cups chopped Onion
2 cups peeled and chopped Eggplant
2 chopped Sweet Peppers
2 tsp Garlic
1 tsp Salt
1 1/2 cup chopped Mushrooms

8 oz good Tomato Sauce
Ricotta Cheese
Parmesan cheese
Mozzarella cheese
Tinkyayda Lasagna Noodles

Cook 1 PackageTinkyaya Lasagna Noodles 15- 17 min
Preheat oven 350

Place first 6 ingredients in oiled and warmed pan, cook 5 minutes
Add mushrooms, saute another 4 minutes
Set aside

Mix 1 small package of Ricotta cheese with 1/3 cup milk  - set aside

Place 1/3 Tomato Sauce on bottom of oven ready pan, add pasta (run under cold water), 1/2 ricotta and 1/2 veggie mixture, repeat 3 times.

Bake for 30 minutes.

Finally

Finally found someone with a great deal of experience with CFS.
Apparently there are three different kinds, two curable, the other manageable.

Amy's Pizza

I was pretty excited to try this pizza since I had heard good things about it.

Overall, I would say it was pretty good for Gluten Free Pizza, but the French Meadow Bakery Crust I found I like quite a bit better.  Of course, now my local store does not carry it, sigh. . .
